- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup erythritol (or your preferred keto sweetener)
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon peppermint extract
- 1/2 cup sugar-free dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the almond flour, cocoa powder, baking soda, and salt until well combined.
- In a large bowl, cream together the softened butter and erythritol until light and fluffy. Add the egg and peppermint extract, mixing until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms. Fold in the sugar-free dark chocolate chips.
- Using a tablespoon, scoop out the dough and roll it into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the palm of your hand.
- Bake for 10-12 minutes, or until the edges are set. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
