Ingredients

  • 1/4 cup coconut oil, melted
  • 1/4 cup powdered erythritol (or other keto-friendly sweetener)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 ounces sugar-free dark chocolate, chopped
  • 1 teaspoon coconut oil (for melting chocolate)

Instructions

  1. In a mixing bowl, combine the shredded coconut, melted coconut oil, powdered erythritol, vanilla extract, and salt. Mix well until all ingredients are fully incorporated and the mixture is sticky.
  2. Line a mini muffin tin with paper liners or grease it lightly. Scoop about 1 tablespoon of the coconut mixture into each muffin cup, pressing it down firmly to form a compact layer.
  3. Place the muffin tin in the freezer for about 30 minutes to allow the coconut mixture to firm up.
  4. While the coconut bars are chilling, prepare the chocolate coating. In a microwave-safe bowl, combine the chopped sugar-free dark chocolate and 1 teaspoon of coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  5. Once the coconut bars have set, remove them from the freezer. Carefully lift each bar out of the muffin tin and dip it into the melted chocolate, ensuring it is fully coated. Place the chocolate-coated bars back onto a parchment-lined tray.
