- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or preferred keto sweetener)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/4 cup sugar-free maple syrup
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, salt, cinnamon, and nutmeg.
- Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the eggs, almond milk, vanilla extract, and sugar-free maple syrup.
- Pour the wet ingredients into the dry mixture and stir until just combined. Do not overmix.
- Turn the dough onto a lightly floured surface and gently knead it a few times until it comes together. Pat it into a circle about 1 inch thick.
- Cut the dough into 8 wedges and place them on the prepared baking sheet.
- Bake for 15-20 minutes or until the scones are golden brown.
- Allow the scones to cool slightly before serving.
