Keto Maple Almond Snow Crunch Cups are a delicious and healthy treat perfect for those following a keto diet.


Ingredients

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol (or sweetener of choice)
  • 1/4 cup unsweetened almond butter
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup chopped almonds
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon maple extract
  • 1/4 cup sugar-free dark chocolate chips

Instructions

  1. In a large mixing bowl, combine almond flour, cocoa powder, powdered erythritol, and salt. Mix well until all dry ingredients are evenly distributed.
  2. In a separate bowl, mix together almond butter, vanilla extract, and maple extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until fully combined. The mixture should be thick and slightly sticky.
  4. Fold in the unsweetened coconut flakes and chopped almonds until evenly distributed.
  5. Line a muffin tin with paper liners or grease it lightly. Spoon the mixture into each cup, filling them about 3/4 full.
  6. Melt the sugar-free dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  7. Drizzle the melted chocolate over each cup, using a spoon to create a decorative pattern if desired.
  8. Place the muffin tin in the refrigerator for at least 30 minutes to allow the cups to set.
  9. Once set, remove the cups from the muffin tin and serve chilled or at room temperature.
