- 1/4 cup unsweetened coconut flakes
- 1/4 cup chopped almonds
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 teaspoon maple extract
- 1/4 cup sugar-free dark chocolate chips
Instructions
- In a large mixing bowl, combine almond flour, cocoa powder, powdered erythritol, and salt. Mix well until all dry ingredients are evenly distributed.
- In a separate bowl, mix together almond butter, vanilla extract, and maple extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until fully combined. The mixture should be thick and slightly sticky.
- Fold in the unsweetened coconut flakes and chopped almonds until evenly distributed.
- Line a muffin tin with paper liners or grease it lightly. Spoon the mixture into each cup, filling them about 3/4 full.
- Melt the sugar-free dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Drizzle the melted chocolate over each cup, using a spoon to create a decorative pattern if desired.
- Place the muffin tin in the refrigerator for at least 30 minutes to allow the cups to set.
- Once set, remove the cups from the muffin tin and serve chilled or at room temperature.

- For added crunch, consider mixing in some sugar-free crispy rice cereal to the batter before filling the cups.
