A delicious and guilt-free Keto Limoncello Tiramisu that combines the rich flavors of mascarpone and Limoncello with a keto-friendly twist.

- 2 cups heavy whipping cream
- 1 cup mascarpone cheese
- 1/2 cup powdered erythritol (or your preferred keto sweetener)
- 1 teaspoon vanilla extract
- 1/2 cup Limoncello liqueur (sugar-free if available)
- 1 cup brewed espresso or strong coffee, cooled
- 1 teaspoon lemon zest
- 1/4 teaspoon salt
- 1 package of keto-friendly ladyfinger cookies (or almond flour cookies)
- Cocoa powder for dusting
Instructions
- In a large mixing bowl, whip the heavy cream until soft peaks form.
- Gradually add the powdered erythritol while continuing to whip until stiff peaks form.
- In another bowl, combine the mascarpone cheese, vanilla extract, lemon zest, and salt.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- In a shallow dish, combine the Limoncello and cooled espresso.
- Quickly dip each ladyfinger into the mixture, ensuring they are soaked but not soggy.
- Layer half of the soaked ladyfingers in the bottom of a 9×9-inch dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder.
Notes
- For a citrus twist, add a few drops of lemon extract to the mascarpone mixture.
- For a chocolate version, use unsweetened cocoa powder in the mascarpone layer and dust the top with cocoa instead of plain.
