Description

A delicious and guilt-free Keto Limoncello Tiramisu that combines the rich flavors of mascarpone and Limoncello with a keto-friendly twist.


Ingredients

Scale
  • 2 cups heavy whipping cream
  • 1 cup mascarpone cheese
  • 1/2 cup powdered erythritol (or your preferred keto sweetener)
  • 1 teaspoon vanilla extract
  • 1/2 cup Limoncello liqueur (sugar-free if available)
  • 1 cup brewed espresso or strong coffee, cooled
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1 package of keto-friendly ladyfinger cookies (or almond flour cookies)
  • Cocoa powder for dusting

Instructions

  1. In a large mixing bowl, whip the heavy cream until soft peaks form.
  2. Gradually add the powdered erythritol while continuing to whip until stiff peaks form.
  3. In another bowl, combine the mascarpone cheese, vanilla extract, lemon zest, and salt.
  4. Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. In a shallow dish, combine the Limoncello and cooled espresso.
  6. Quickly dip each ladyfinger into the mixture, ensuring they are soaked but not soggy.
  7. Layer half of the soaked ladyfingers in the bottom of a 9×9-inch dish.
  8. Spread half of the mascarpone mixture over the ladyfingers.
  9. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  10. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  11. Before serving, dust the top with cocoa powder.

Notes

  • For a citrus twist, add a few drops of lemon extract to the mascarpone mixture.
  • For a chocolate version, use unsweetened cocoa powder in the mascarpone layer and dust the top with cocoa instead of plain.
