- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup granulated erythritol
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/2 cup powdered erythritol
- 1 teaspoon vanilla extract
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup heavy whipping cream
- Fresh berries for garnish (optional)
Instructions
- Preheat the oven to 350°F. In a medium bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Stir in melted butter and vanilla extract until well combined. Press the mixture into the bottom of a greased 8-inch square baking dish. Bake for 10-12 minutes until lightly golden. Allow to cool completely.
- In a mixing bowl, beat the softened cream cheese with powdered erythritol and vanilla extract until smooth and creamy. Add lemon juice and lemon zest, mixing until well incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Once the crust has cooled, crumble it into small pieces. In serving glasses or bowls, layer the crumbled crust, followed by the lemon cheesecake filling. Repeat the layers until the glasses are filled.
- Chill the parfaits in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a berry twist, add a layer of fresh raspberries or blueberries between the layers.
- If you prefer a sweeter dessert, adjust the amount of erythritol to taste.
