Ingredients

  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • ยฝ teaspoon baking powder
  • ยผ teaspoon salt

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened cream cheese and erythritol. Beat with an electric mixer until smooth and creamy.
  3. Add the egg, lemon juice, lemon zest, and vanilla extract to the mixture. Mix until well combined.
  4. In a separate bowl, whisk together the almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Using a tablespoon, scoop out the dough and place it onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Gently flatten each cookie with the back of a spoon or your fingers.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
