- 8 ounces cream cheese, softened
- ½ cup powdered erythritol
- 1 large egg
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F and prepare an 8×8-inch baking dish by lining it with parchment paper.
- In a mixing bowl, combine almond flour, granulated erythritol, salt, and baking powder. Gradually mix in the melted butter until the texture resembles coarse crumbs.
- Press the mixture firmly into the base of the lined baking dish to form a crust.
- In a separate bowl, whip the softened cream cheese and powdered erythritol until smooth.
- Add the egg, fresh lemon juice, lemon zest, and vanilla extract to the cream cheese mixture, stirring until well combined.
- Pour the cheesecake mixture over the prepared crust and smooth it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set with a slight jiggle in the center.
- Allow to cool on the counter for about 30 minutes, then refrigerate for a minimum of 2 hours.
