- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips
- 1/4 cup chopped nuts (walnuts, pecans, or macadamia nuts)
- 1/4 cup sugar-free dried fruit (like cranberries or blueberries)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, shredded coconut, erythritol, baking soda, and salt. Mix well.
- In another bowl, cream together the softened butter, egg, and vanilla extract until smooth and well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the sugar-free chocolate chips, chopped nuts, and dried fruit until evenly distributed.
- Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a nut-free version, substitute almond flour with sunflower seed flour.
