Create a festive Keto Gingerbread House that’s low in carbs and perfect for the holiday season!
Ingredients

- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup erythritol or other keto-friendly sweetener
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
For the royal icing:
- 2 large egg whites
- 3 cups powdered erythritol
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, coconut flour, erythritol, ginger, cinnamon, baking powder, salt, and cloves. Mix well.
- In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If the dough is too crumbly, add a little more almond milk, one teaspoon at a time, until it holds together.
- Roll out the dough between two sheets of parchment paper to about 1/4 inch thick. Cut out shapes for the gingerbread house (two rectangles for the walls, two triangles for the roof, and a rectangle for the base).
- Transfer the cutouts to the prepared baking sheet and bake for 12-15 minutes or until golden brown. Allow to cool completely on a wire rack.
- For the royal icing, beat egg whites in a clean bowl until frothy. Gradually add powdered erythritol and lemon juice, beating until stiff peaks form.
- Once the gingerbread pieces are cool, use the royal icing to assemble the house. Pipe icing along the edges to glue the pieces together.
- Let the assembled house sit for at least 30 minutes to allow the icing to harden before decorating.
Notes
- For added flavor, consider adding a teaspoon of nutmeg to the dough.
- You can also use sugar-free candies or keto-friendly sprinkles to decorate your gingerbread house.
