- 1 cup unsweetened almond butter
- 1/2 cup coconut oil, melted
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts
Instructions
- In a large mixing bowl, combine the almond butter and melted coconut oil. Stir until well blended.
- Add the cocoa powder, erythritol, vanilla extract, ground ginger, ground cinnamon, ground nutmeg, and salt to the bowl. Mix until all ingredients are thoroughly combined and a smooth batter forms.
- Fold in the chopped walnuts until evenly distributed throughout the mixture.
- Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet, spacing them about 1 inch apart.
- Place the baking sheet in the refrigerator for at least 30 minutes to allow the fudge drops to firm up.
- Once set, remove from the refrigerator and enjoy! Store any leftovers in an airtight container in the fridge for up to one week.
Notes
- For a chocolatey twist, add 1/4 cup of sugar-free chocolate chips to the mixture before chilling.
- If you prefer a spicier flavor, increase the ground ginger to 1 1/2 teaspoons or add a pinch of cayenne pepper for a kick.
