Keto-Friendly Musketeer Candy Bars: Indulge Guilt-Free!


Ingredients

  • 1 cup unsweetened almond butter
  • 1/2 cup coconut oil, melted
  • 1/4 cup powdered erythritol (or your preferred keto sweetener)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup unsweetened shredded coconut
  • 1/2 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil (for chocolate coating)

Instructions

  1. In a medium bowl, combine the almond butter, melted coconut oil, powdered erythritol, vanilla extract, and salt. Mix until smooth and well combined.
  2. Stir in the shredded coconut until evenly distributed.
  3. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  4. Pour the almond butter mixture into the prepared dish and spread it evenly. Press down firmly to create a compact layer.
  5. Place the dish in the freezer for about 30 minutes, or until the mixture is firm.
  6. Once firm, remove from the freezer and cut into bar-sized pieces.
  7. In a small microwave-safe bowl, combine the sugar-free chocolate chips and 1 tablespoon of coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  8. Dip each bar into the melted chocolate, ensuring they are fully coated. Place the coated bars back on the parchment paper.
  9. Return the bars to the freezer for another 15-20 minutes to set the chocolate.
  10. Once the chocolate is set, remove the bars from the parchment paper and store them in an airtight container in the refrigerator.

Notes

  • You can add a pinch of sea salt on top of the chocolate coating for a sweet and salty flavor.
  • For a different flavor profile, try adding a few drops of almond extract or a sprinkle of cinnamon to the almond butter mixture before chilling.
