A deliciously crunchy upgrade to traditional fries using zucchini, perfect for a keto diet.


Ingredients

  • 2 medium zucchini
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • Cooking spray or olive oil for drizzling

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  2. Cut the zucchini into thin strips, resembling traditional French fries. Pat them dry with paper towels to remove excess moisture.
  3. In a shallow bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  4. In another bowl, whisk the egg until well beaten.
  5. Dip each zucchini strip into the egg, allowing any excess to drip off, then coat it in the almond flour mixture. Place the coated strips on the prepared baking sheet.
  6. Spray or drizzle the coated zucchini fries lightly with cooking spray or olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For extra flavor, add Italian seasoning or chili powder to the almond flour mixture.
