- 2 medium zucchini
- 1/4 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- Cooking spray or olive oil for drizzling
Instructions
- Preheat your oven to 425°F. Line a baking sheet with parchment paper.
- Cut the zucchini into thin strips, resembling traditional French fries. Pat them dry with paper towels to remove excess moisture.
- In a shallow bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
- In another bowl, whisk the egg until well beaten.
- Dip each zucchini strip into the egg, allowing any excess to drip off, then coat it in the almond flour mixture. Place the coated strips on the prepared baking sheet.
- Spray or drizzle the coated zucchini fries lightly with cooking spray or olive oil.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For extra flavor, add Italian seasoning or chili powder to the almond flour mixture.
- Try using eggplant or jicama instead of zucchini for a different texture and taste.
