- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup psyllium husk powder
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 cup olive oil
- 1 cup warm water
- 2 large eggs
- 1 teaspoon apple cider vinegar
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Mix well until all dry ingredients are thoroughly combined.
- In a separate bowl, whisk together the olive oil, warm water, eggs, and apple cider vinegar until smooth.
- Gradually pour the wet ingredients into the dry ingredients, stirring continuously until a dough forms. The dough will be sticky.
- Allow the dough to rest for about 10 minutes to let the psyllium husk absorb moisture and firm up.
- Wet your hands slightly to prevent sticking, then divide the dough into two equal portions. Shape each portion into a long baguette shape, about 12 inches long, and place them on the prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes, or until the baguettes are golden brown and sound hollow when tapped on the bottom.
- Remove from the oven and let cool on a wire rack for at least 10 minutes before slicing.
Notes
- For added flavor, mix in herbs like rosemary or thyme into the dough before baking.
- If you prefer a crustier baguette, place a small oven-safe dish with water on the bottom rack of the oven while baking to create steam.
