Description

Crispy Keto Falafel Bites made with almond flour and fresh herbs, perfect for a low-carb snack.

Ingredients

Scale
  • 1 cup almond flour
  • 1 cup finely chopped fresh parsley
  • 1/2 cup finely chopped fresh cilantro
  • 1/4 cup finely chopped green onions
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil for frying

Instructions

  1. Mix the almond flour, parsley, cilantro, green onions, minced garlic, cumin, coriander, baking powder, salt, and black pepper in a large bowl until well combined.
  2. Incorporate the egg into the dry mixture, stirring until a cohesive dough forms. If too dry, add a teaspoon of water gradually until the desired consistency is reached.
  3. Shape the dough into small balls or patties, roughly 1 to 1.5 inches in diameter.
  4. Heat olive oil in a skillet over medium heat. Once shimmering, gently place the bites into the skillet, ensuring space between them.
  5. Cook for about 3-4 minutes on each side, or until golden-brown crust forms.
  6. Transfer the bites to a plate lined with paper towels to drain excess oil.
  7. Enjoy warm, paired with a dipping sauce like tahini or a creamy yogurt dip.

Notes

  • For an extra kick, mix in 1/2 teaspoon of cayenne pepper or red pepper flakes.
  • A tablespoon of lemon juice and zest can be added for a refreshing citrus flavor.
