  • 1 medium onion, diced

  • 1 teaspoon freshly grated ginger
  • 1 medium ripe tomato, diced
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (adjust for heat preference)
  • Salt to taste
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Begin by preheating your oven to 400°F (200°C). Use a fork to poke holes in the eggplants, then place them on a baking sheet. Roast for 30-40 minutes until the skin is charred and the insides are tender. Once done, take them out and let them cool for a bit.
  2. After cooling, carefully remove the skin from the eggplants and chop the flesh into small chunks. Set this aside for later use.
  3. In a large frying pan, warm the olive oil over medium heat. Add the diced onion and sauté until it turns a lovely golden brown, which should take about 5-7 minutes.
  4. Incorporate the minced garlic and grated ginger into the pan, stirring for another 1-2 minutes until the aroma fills the air.
  5. Toss in the diced tomato along with the cumin, coriander, turmeric, cayenne pepper, and salt. Let this mixture cook for about 5-7 minutes until the tomato breaks down and the spices are well integrated.
  6. Fold in the roasted eggplant pieces, mixing everything together thoroughly. Allow it to cook for an additional 5 minutes, letting the flavors blend beautifully.
  7. Take the pan off the heat and mix in the chopped cilantro and lemon juice. Taste and adjust the seasoning if needed.
  8. Let the dip cool slightly before serving. It can be enjoyed warm or chilled, making it versatile for any occasion.
