Ingredients

  • 1 cup almond flour
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 pound ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sliced jalapeños (optional)
  • Olive oil for cooking

Instructions

  1. In a mixing bowl, combine almond flour, mozzarella cheese, cream cheese, garlic powder, onion powder, salt, and egg. Mix until a dough forms.
  2. Preheat a non-stick skillet over medium heat.
  3. Divide the dough into two equal portions and flatten each into a round shape about 1/4 inch thick.
  4. Cook each side for about 2-3 minutes until golden brown. Remove from skillet and set aside.
  5. In the same skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat and stir in taco seasoning.
  6. To assemble, place one cooked dough round on a flat surface. Layer with half of the meat mixture, followed by lettuce, tomatoes, sour cream, cheddar cheese, and jalapeños if using.
  7. Top with the second dough round and press down gently.
  8. Return the assembled crunchwrap to the skillet and cook for an additional 2-3 minutes on each side until crispy and golden.
  9. Slice in half and serve warm.
