A delicious recipe for Keto Cranberry Brie Tartlets that are perfect for a low-carb diet.

- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/2 cup fresh or frozen cranberries
- 1/4 cup sugar-free cranberry sauce
- 8 ounces Brie cheese, cut into small pieces
- 1 tablespoon fresh rosemary, chopped (optional)
- 1 tablespoon olive oil (for drizzling)
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, combine almond flour, coconut flour, salt, and baking powder. Mix well.
- Add the softened butter and egg to the dry ingredients. Mix until a dough forms.
- Press the dough into the bottom and up the sides of a mini muffin tin to form tartlet shells. Bake for 10-12 minutes or until golden brown.
- While the shells are baking, prepare the filling. In a small saucepan, combine cranberries and sugar-free cranberry sauce over medium heat. Cook until the cranberries burst and the mixture thickens, about 5-7 minutes.
- Remove the tartlet shells from the oven and let them cool slightly. Place a piece of Brie cheese in each shell, then spoon the cranberry mixture on top.
- Drizzle a little olive oil over the tartlets and sprinkle with fresh rosemary if using.
- Return the tartlets to the oven and bake for an additional 5-7 minutes, until the Brie is melted and bubbly.
- Allow to cool for a few minutes before serving.
Notes
- For a sweeter touch, consider adding a sprinkle of erythritol or stevia on top of the cranberry filling before baking.
- You can also substitute the Brie with goat cheese for a tangy flavor variation.
