Description

A delicious and guilt-free Keto Coffee Banana Bread that combines the flavors of banana and coffee for a perfect treat.


Ingredients

  • 2 ripe bananas, mashed (about 1 cup)
  • 1/2 cup unsweetened almond butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol or your preferred keto sweetener
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup brewed coffee, cooled

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large mixing bowl, combine the mashed bananas, almond butter, cocoa powder, erythritol, eggs, vanilla extract, brewed coffee, baking soda, salt, and cinnamon. Mix until well combined and smooth.
  4. If using, fold in the chopped walnuts or pecans until evenly distributed.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  7. Once baked, remove from the oven and let it cool in the pan for about 10 minutes.
  8. Transfer the bread to a wire rack to cool completely before slicing.
