- 2 ripe bananas, mashed (about 1 cup)
- 1/2 cup unsweetened almond butter
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol or your preferred keto sweetener
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup brewed coffee, cooled
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas, almond butter, cocoa powder, erythritol, eggs, vanilla extract, brewed coffee, baking soda, salt, and cinnamon. Mix until well combined and smooth.
- If using, fold in the chopped walnuts or pecans until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
- Once baked, remove from the oven and let it cool in the pan for about 10 minutes.
- Transfer the bread to a wire rack to cool completely before slicing.
