Ingredients

  • ½ cup erythritol or preferred keto sweetener
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 large eggs
  • ½ cup unsweetened coconut milk
  • ½ teaspoon vanilla extract
  • ½ cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, combine almond flour, shredded coconut, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the eggs, coconut milk, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Gently fold in the fresh raspberries.
  6. Divide the batter evenly among the cupcake liners, filling each about ¾ full.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
