Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or preferred keto sweetener)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1/4 cup powdered erythritol (for frosting)
  • 1 tablespoon heavy cream (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, coconut flour, erythritol, baking powder, salt, and ground cinnamon. Mix well.
  3. In a separate bowl, whisk together the melted butter, eggs, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Microwave the mozzarella cheese for about 30 seconds until melted. Add the melted cheese to the dough and mix until fully incorporated.
  6. Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
  7. In a small bowl, mix together the softened cream cheese, powdered erythritol, heavy cream, and vanilla extract to create the frosting.
  8. Spread the cream cheese mixture evenly over the rolled-out dough.
  9. Starting from one edge, carefully roll the dough into a log shape. Slice the log into 8 equal pieces.
  10. Place the rolls on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  11. Allow the rolls to cool for a few minutes before drizzling with any remaining frosting.

Notes

  • For a nut-free version, you can substitute almond flour with sunflower seed flour.
