- 1 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- ¼ cup granulated erythritol or preferred keto sweetener
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 8 ounces cream cheese, softened
- ½ cup powdered erythritol or preferred keto sweetener
- 1 teaspoon vanilla extract
- 4 ounces sugar-free dark chocolate, melted and cooled
Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine almond flour, cocoa powder, granulated erythritol, melted butter, and 1 teaspoon vanilla extract. Mix until well combined.
- Press the mixture into the bottom and up the sides of a 9-inch pie pan to form a crust.
- Bake for 10-12 minutes, then remove from the oven and let it cool completely.
- In a separate bowl, beat the heavy whipping cream until soft peaks form.
- In another bowl, beat the softened cream cheese and powdered erythritol until smooth.
- Add the melted chocolate and 1 teaspoon vanilla extract, mixing until fully incorporated.
- Gently fold in the whipped cream until no streaks remain.
- Pour the chocolate filling into the cooled crust and smooth the top.
- Refrigerate for at least 2 hours to set before serving.
Notes
- This pie can be garnished with additional whipped cream or shaved sugar-free chocolate if desired.
- For a richer flavor, try adding a pinch of sea salt to the chocolate filling.
- You can substitute the almond flour with coconut flour, but use only ½ cup as it absorbs more moisture.
