- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup granulated erythritol (or preferred keto sweetener)
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F and grease a donut pan.
- In a large mixing bowl, combine almond flour, cocoa powder, baking powder, baking soda, salt, and erythritol.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra flavor, consider adding a sugar-free chocolate glaze on top after the donuts have cooled.
- Alternatively, you can mix in some sugar-free chocolate chips into the batter for a chocolate chip version.
