Keto Chocolate Cheesecake with Chocolate Strawberries delights every bite.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated erythritol or preferred keto sweetener
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup strawberries, hulled
  • 1/2 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a large mixing bowl, beat the softened cream cheese and erythritol together until smooth and creamy.
  3. Add the cocoa powder, heavy cream, eggs, vanilla extract, and salt to the cream cheese mixture. Beat until well combined and smooth.
  4. Pour the cheesecake batter into the prepared springform pan. Smooth the top with a spatula.
  5. Bake in the preheated oven for 30-35 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional 30 minutes to cool gradually.
  6. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.
  7. While the cheesecake is chilling, prepare the chocolate strawberries. Melt the sugar-free chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  8. Dip each strawberry into the melted chocolate, allowing excess chocolate to drip off. Place the dipped strawberries on a parchment-lined baking sheet and refrigerate until the chocolate is set.
  9. Once the cheesecake is chilled, remove it from the springform pan and slice it. Serve each slice with a few chocolate-covered strawberries on the side.

Notes

  • For a richer flavor, add a teaspoon of instant coffee granules to the cheesecake batter.
  • For a crust option, use crushed almond flour mixed with melted butter and press it into the bottom of the springform pan before adding the cheesecake batter.
