Keto Chocolate Cheesecake with Chocolate Strawberries delights every bite.

- 8 oz cream cheese, softened
- 1/2 cup granulated erythritol or preferred keto sweetener
- 1/2 cup unsweetened cocoa powder
- 1/2 cup heavy cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup strawberries, hulled
- 1/2 cup sugar-free chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
- In a large mixing bowl, beat the softened cream cheese and erythritol together until smooth and creamy.
- Add the cocoa powder, heavy cream, eggs, vanilla extract, and salt to the cream cheese mixture. Beat until well combined and smooth.
- Pour the cheesecake batter into the prepared springform pan. Smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional 30 minutes to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.
- While the cheesecake is chilling, prepare the chocolate strawberries. Melt the sugar-free chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
- Dip each strawberry into the melted chocolate, allowing excess chocolate to drip off. Place the dipped strawberries on a parchment-lined baking sheet and refrigerate until the chocolate is set.
- Once the cheesecake is chilled, remove it from the springform pan and slice it. Serve each slice with a few chocolate-covered strawberries on the side.
Notes
- For a richer flavor, add a teaspoon of instant coffee granules to the cheesecake batter.
- For a crust option, use crushed almond flour mixed with melted butter and press it into the bottom of the springform pan before adding the cheesecake batter.
