Ingredients

  • 1 pound ground beef (80/20)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes (no sugar added)
  • 1 can (6 ounces) tomato paste (no sugar added)
  • 1 cup beef broth (low sodium)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 cup bell peppers, diced (any color)
  • 1 can (15 ounces) kidney beans, drained and rinsed (optional for a less strict keto)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced tomatoes, tomato paste, beef broth, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using).
  4. Bring the mixture to a simmer, then reduce the heat to low.
  5. Cover and let it cook for 30 minutes, stirring occasionally.
  6. Add the diced bell peppers and kidney beans (if using) to the pot, and cook for an additional 10-15 minutes until the peppers are tender.
  7. Taste and adjust seasoning as needed before serving.

Notes

  • For a vegetarian version, substitute the ground beef with crumbled tempeh or mushrooms and use vegetable broth.
  • Top with shredded cheese, sour cream, or avocado for added flavor and creaminess.
