  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper (optional, for added spice)
  • 1 cup cauliflower rice (fresh or frozen)
  • 1 cup fresh spinach, chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup slivered almonds (optional, for topping)

Instructions

  1. In a mixing bowl, whisk together the Greek yogurt, olive oil, lemon juice, garam masala, cumin, coriander, turmeric, smoked paprika, salt, black pepper, and cayenne pepper until smooth and well combined.
  2. Toss the diced chicken in the marinade, ensuring each piece is thoroughly coated. Cover the bowl and let it marinate in the refrigerator for at least one hour, or overnight for enhanced flavor.
  3. Heat your grill or grill pan to medium-high heat. Take the marinated chicken out of the fridge and let any excess marinade drip off.
  4. Grill the chicken for about 6-8 minutes, flipping occasionally, until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F.
  5. If using frozen cauliflower rice, cook it according to the package instructions. For fresh cauliflower, sauté it in a skillet over medium heat for about 5 minutes until it becomes tender.
  6. In a bowl, create a base with the cauliflower rice, then layer on the grilled chicken, followed by the chopped spinach, diced cucumber, and cherry tomatoes.
  7. Top with fresh cilantro and slivered almonds for an added crunch. Serve right away for the best flavor.
