Ingredients

  • 2 boneless, skinless chicken breasts (approximately 1 pound)
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup almond flour
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 2 tablespoons capers, rinsed and drained
  • 1 tablespoon fresh parsley, finely chopped (for garnish)

Instructions

  1. Place the chicken breasts between two sheets of parchment paper and gently pound them to an even thickness of about 1/2 inch. Season both sides with sea salt and black pepper.
  2. Coat each chicken breast in almond flour, shaking off any excess.
  3. In a large skillet, heat the olive oil and one tablespoon of butter over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and fully cooked. Transfer the chicken to a plate and keep warm.
  4. In the same skillet, pour in the chicken broth, lemon juice, and capers. Bring to a gentle simmer, scraping the bottom of the pan. Simmer for about 2-3 minutes.
  5. Add the remaining tablespoon of butter to the sauce, stirring until it melts and thickens slightly. Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional minute or two to warm through.
  6. Serve immediately, garnished with freshly chopped parsley and extra lemon slices.
