- 2 tablespoons ghee
- 1 medium onion, finely chopped
- 2 cloves garlic, crushed
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (to taste)
- 1 medium cauliflower, broken into florets
- 1 medium zucchini, chopped
- 1 can (14.5 ounces) diced tomatoes, drained
- 4 cups vegetable stock
- 1 cup fresh parsley, roughly chopped
- 1 cup fresh cilantro, roughly chopped
- Salt and black pepper to taste
- Juice of 1 lemon
Instructions
- Begin by melting the ghee in a large saucepan over medium heat.
- Add the chopped onion and sauté until it becomes soft and translucent, about 5 minutes.
- Incorporate the crushed garlic along with the cumin, coriander, smoked paprika, cinnamon, and cayenne pepper. Cook for another 1-2 minutes until the spices release their aroma.
- Introduce the cauliflower florets and chopped zucchini to the pot, stirring well to coat them with the spice mixture. Sauté for approximately 5 minutes until the vegetables begin to soften.
- Add the drained diced tomatoes and vegetable stock to the pot. Increase the heat to bring the stew to a gentle boil, then lower the heat and cover the pot.
- Let it simmer for 20-25 minutes, or until the vegetables are tender and the flavors meld together.
- Stir in the chopped parsley and cilantro, seasoning with salt, pepper, and a squeeze of fresh lemon juice.
- Serve the stew warm, drizzled with additional spiced ghee if desired.
