Ingredients

  • 1 teaspoon coriander powder

  • 1/4 teaspoon cayenne pepper (to taste)
  • 1 medium cauliflower, broken into florets
  • 1 medium zucchini, chopped
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 4 cups vegetable stock
  • 1 cup fresh parsley, roughly chopped
  • 1 cup fresh cilantro, roughly chopped
  • Salt and black pepper to taste
  • Juice of 1 lemon

Instructions

  1. Begin by melting the ghee in a large saucepan over medium heat.
  2. Add the chopped onion and sauté until it becomes soft and translucent, about 5 minutes.
  3. Incorporate the crushed garlic along with the cumin, coriander, smoked paprika, cinnamon, and cayenne pepper. Cook for another 1-2 minutes until the spices release their aroma.
  4. Introduce the cauliflower florets and chopped zucchini to the pot, stirring well to coat them with the spice mixture. Sauté for approximately 5 minutes until the vegetables begin to soften.
  5. Add the drained diced tomatoes and vegetable stock to the pot. Increase the heat to bring the stew to a gentle boil, then lower the heat and cover the pot.
  6. Let it simmer for 20-25 minutes, or until the vegetables are tender and the flavors meld together.
  7. Stir in the chopped parsley and cilantro, seasoning with salt, pepper, and a squeeze of fresh lemon juice.
  8. Serve the stew warm, drizzled with additional spiced ghee if desired.
