Ingredients

  • 1/4 cup powdered erythritol
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsweetened cocoa powder
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/4 cup powdered erythritol (for filling)
  • 1/2 teaspoon vanilla extract (for filling)
  • 1/4 cup mini sugar-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, powdered erythritol, salt, cinnamon, and cocoa powder. Mix well.
  3. In a separate bowl, whisk together the egg, melted butter, and vanilla extract. Add this mixture to the dry ingredients and stir until a dough forms.
  4. Divide the dough into four equal portions. Roll each portion between two sheets of parchment paper until thin (about 1/8 inch thick). Cut into rectangles (about 3×5 inches).
  5. Carefully wrap each rectangle around a cannoli mold, sealing the edges with a bit of water. Place on the prepared baking sheet.
  6. Bake for 12-15 minutes or until golden brown. Remove from the oven and let cool for a few minutes before gently removing the molds.
  7. In a bowl, mix ricotta cheese, powdered erythritol, and vanilla extract until smooth. Stir in mini chocolate chips if using.
  8. Once the shells are completely cool, fill each shell with the ricotta mixture using a piping bag or a spoon.
  9. Dust with additional powdered erythritol before serving.

Notes

  • For a different flavor, add a teaspoon of orange zest to the ricotta filling for a citrus twist.
  • If you prefer a crunchier shell, bake the cannoli shells a little longer, but watch closely to prevent burning.
