Ingredients

  • 1 ½ cups almond flour
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated erythritol (or preferred keto sweetener)
  • 1 teaspoon vanilla extract
  • 1 ½ cups cream cheese, softened
  • ½ cup sour cream
  • ½ cup granulated erythritol
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan with butter or cooking spray.
  2. In a mixing bowl, combine almond flour, melted butter, 2 tablespoons erythritol, and 1 teaspoon vanilla extract. Stir until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  4. In a large bowl, beat the softened cream cheese until smooth. Add the sour cream and ½ cup erythritol, mixing until well combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in 1 teaspoon vanilla extract, chopped pecans, cinnamon, and a pinch of salt until evenly distributed.
  7. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  10. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight, before serving.
