- 1 cup natural peanut butter (unsweetened)
- 1/2 cup powdered erythritol or your preferred keto-friendly sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup sugar-free dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a mixing bowl, combine the peanut butter, powdered erythritol, vanilla extract, and salt. Mix until smooth and well combined.
- Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the balls on a parchment-lined baking sheet.
- Refrigerate the peanut butter balls for at least 30 minutes to firm up.
- While the balls are chilling, melt the sugar-free dark chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
- Remove the peanut butter balls from the refrigerator. Dip each ball into the melted chocolate, covering it about two-thirds of the way, and return them to the parchment-lined baking sheet.
- Once all the balls are coated, refrigerate again for about 15 minutes to set the chocolate.
- Serve chilled or at room temperature.
Notes
- For a different flavor, try adding a pinch of cinnamon or a few drops of almond extract to the peanut butter mixture.
- You can substitute almond butter for peanut butter for a nut-free option or to change the flavor profile.
