  • 1/2 cup erythritol or your preferred keto-friendly sweetener
  • 1/2 cup unsweetened almond milk
  • 1/2 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened cocoa powder (optional, for a chocolate twist)
  • For the frosting: 1/2 cup cream cheese, softened
  • 1/4 cup unsweetened cocoa powder (if making chocolate frosting)
  • 1/4 cup erythritol or your preferred keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. In a blender or food processor, combine the chopped carrots, eggs, erythritol, almond milk, melted coconut oil, and vanilla extract. Blend until smooth.
  3. In a large mixing bowl, whisk together the almond flour, baking powder, baking soda, salt, and cocoa powder (if using).
  4. Pour the carrot mixture into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. While the cake is cooling, prepare the frosting by mixing the softened cream cheese, erythritol, cocoa powder (if using), vanilla extract, and heavy cream in a bowl until smooth and creamy.
