- 1 lb ground beef
- 4 slices bacon, chopped
- 1 cup cauliflower rice
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced pickles
- 1/4 cup diced red onion
- 1/4 cup sugar-free ketchup
- 2 tablespoons mayonnaise
- 1 tablespoon mustard
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- Add the ground beef to the skillet, season with salt and pepper, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- While the beef is cooking, heat the olive oil in a separate pan over medium heat. Add the cauliflower rice and sauté for about 5 minutes until tender. Season with salt and pepper.
- To assemble the bowls, divide the cauliflower rice among four bowls. Top each with the cooked ground beef, crispy bacon, shredded cheddar cheese, diced tomatoes, pickles, and red onion.
- In a small bowl, mix together the sugar-free ketchup, mayonnaise, and mustard. Drizzle the sauce over each bowl before serving.
Notes
- For added flavor, consider using different types of cheese like pepper jack for a spicy kick. You can also substitute the ground beef with ground turkey or chicken for a lighter option.
