Keto Apple Fritter Cookies: A Delicious Low-Carb Treat!

Ingredients

Scale
  • 1 ½ cups almond flour
  • ½ cup erythritol or your preferred keto sweetener
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • ¼ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • ½ cup diced apple (use a low-carb variety like Granny Smith)
  • ¼ cup chopped walnuts or pecans (optional)
  • 1 tablespoon coconut oil, melted

Instructions

  1. Preheat your oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine the almond flour, erythritol, baking powder, cinnamon, and salt. Mix well to ensure there are no clumps.
  4. In another bowl, whisk together the egg, applesauce, vanilla extract, and melted coconut oil until smooth.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Gently fold in the diced apple and nuts if using.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
  • For added flavor, consider drizzling a sugar-free glaze made from powdered erythritol and almond milk over the cooled cookies.
  • You can also experiment by adding a pinch of nutmeg or using different nuts for a unique twist.
