Scale
- 1 ½ cups almond flour
- ½ cup erythritol or your preferred keto sweetener
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 large egg
- ¼ cup unsweetened applesauce
- 1 teaspoon vanilla extract
- ½ cup diced apple (use a low-carb variety like Granny Smith)
- ¼ cup chopped walnuts or pecans (optional)
- 1 tablespoon coconut oil, melted
Instructions
- Preheat your oven to 350°F.
- Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, erythritol, baking powder, cinnamon, and salt. Mix well to ensure there are no clumps.
- In another bowl, whisk together the egg, applesauce, vanilla extract, and melted coconut oil until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the diced apple and nuts if using.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
- For added flavor, consider drizzling a sugar-free glaze made from powdered erythritol and almond milk over the cooled cookies.
- You can also experiment by adding a pinch of nutmeg or using different nuts for a unique twist.
