Description

A delicious and aromatic spiced chicken dish served with basmati rice, perfect for family gatherings.


Ingredients

  • 2 cups basmati rice
  • 1 whole chicken (about 34 pounds), cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 medium tomatoes, chopped
  • 2 carrots, grated
  • 1/4 cup tomato paste
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 4 cups chicken broth
  • 1 tablespoon Kabsa spice mix (or a mix of cumin, coriander, cardamom, and cinnamon)
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Add the chicken pieces to the pot, browning them on all sides for about 10 minutes.
  5. Stir in the chopped tomatoes, grated carrots, tomato paste, and Kabsa spice mix. Cook for another 5 minutes, allowing the flavors to meld.
  6. Pour in the chicken broth and bring the mixture to a boil. Season with salt and pepper.
  7. Reduce the heat to low, cover the pot, and simmer for 30 minutes until the chicken is cooked through.
  8. Remove the chicken pieces and set them aside. Add the drained rice to the pot, stirring gently to combine.
  9. Place the chicken pieces back on top of the rice, cover, and cook on low heat for an additional 20 minutes, or until the rice is tender and has absorbed the liquid.
  10. Once done, fluff the rice with a fork, and stir in the raisins and slivered almonds. Garnish with fresh parsley or cilantro before serving.

Notes

  • For a vegetarian version, substitute the chicken with chickpeas or mixed vegetables.
  • Add a squeeze of lemon juice before serving for a fresh, zesty flavor.
