Kaak Warka with Almond Filling is a traditional Algerian pastry that features a delightful almond filling encased in a soft dough, perfect for any occasion.

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon

- 1 cup almonds, blanched and finely ground (for the filling)

- 1 teaspoon orange blossom water (for the filling)

- 1 tablespoon unsalted butter, melted (for the filling)
- 1 cup sugar (for the syrup)
- 1/2 cup water (for the syrup)
- 1 tablespoon lemon juice (for the syrup)
- 1 teaspoon orange blossom water (for the syrup)
Instructions
- In a large mixing bowl, combine the flour, softened butter, powdered sugar, salt, and ground cinnamon. Mix until crumbly.
- Add the vanilla extract and cold water gradually, mixing until a soft dough forms. Knead the dough gently for a few minutes until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
- In another bowl, prepare the almond filling by mixing the ground almonds, powdered sugar, orange blossom water, ground cinnamon, and melted butter until well combined. Set aside.
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into circles using a cookie cutter or a glass (about 3 inches in diameter).
- Place a teaspoon of the almond filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal.
- Place the filled pastries on the prepared baking sheet. Bake for 20-25 minutes or until lightly golden.
- While the pastries are baking, prepare the syrup by combining sugar, water, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and stir in orange blossom water.
- Once the pastries are done baking, remove them from the oven and immediately dip them into the warm syrup for a few seconds, then place them on a wire rack to cool.
Notes
- For a richer flavor, you can add a pinch of nutmeg to the almond filling.
- Experiment with different fillings such as pistachios or walnuts for a unique twist on traditional Kaak Warka.
