Kaak Warka with Almond Filling is a traditional Algerian pastry that features a delightful almond filling encased in a soft dough, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/4 cup cold water
  • 1 cup almonds, blanched and finely ground (for the filling)
  • 1/2 cup powdered sugar (for the filling)
  • 1 teaspoon orange blossom water (for the filling)
  • 1/4 teaspoon ground cinnamon (for the filling)
  • 1 tablespoon unsalted butter, melted (for the filling)
  • 1 cup sugar (for the syrup)
  • 1/2 cup water (for the syrup)
  • 1 tablespoon lemon juice (for the syrup)
  • 1 teaspoon orange blossom water (for the syrup)

Instructions

  1. In a large mixing bowl, combine the flour, softened butter, powdered sugar, salt, and ground cinnamon. Mix until crumbly.
  2. Add the vanilla extract and cold water gradually, mixing until a soft dough forms. Knead the dough gently for a few minutes until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. In another bowl, prepare the almond filling by mixing the ground almonds, powdered sugar, orange blossom water, ground cinnamon, and melted butter until well combined. Set aside.
  4. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into circles using a cookie cutter or a glass (about 3 inches in diameter).
  6. Place a teaspoon of the almond filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal.
  7. Place the filled pastries on the prepared baking sheet. Bake for 20-25 minutes or until lightly golden.
  8. While the pastries are baking, prepare the syrup by combining sugar, water, and lemon juice in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and stir in orange blossom water.
  9. Once the pastries are done baking, remove them from the oven and immediately dip them into the warm syrup for a few seconds, then place them on a wire rack to cool.

Notes

  • For a richer flavor, you can add a pinch of nutmeg to the almond filling.
  • Experiment with different fillings such as pistachios or walnuts for a unique twist on traditional Kaak Warka.
