Description

A delicious and healthy sweet potato noodle stir-fry known as Japchae, featuring a mix of vegetables and savory flavors.


Ingredients

  • 8 ounces sweet potato noodles (dangmyeon)
  • 2 tablespoons vegetable oil
  • 1 small onion, thinly sliced
  • 1 carrot, julienned
  • 1 bell pepper (red or green), thinly sliced
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon sesame seeds
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Soak the sweet potato noodles in warm water for about 30 minutes or until they soften. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the onion and sauté for 2-3 minutes until translucent.
  3. Add the carrot and bell pepper to the skillet and stir-fry for another 3-4 minutes until they start to soften.
  4. Add the garlic and spinach, cooking for an additional 1-2 minutes until the spinach wilts.
  5. Add the softened sweet potato noodles to the skillet. Pour in the soy sauce, sesame oil, and sugar. Toss everything together until well combined and heated through, about 3-4 minutes.
  6. Season with salt and pepper to taste. Sprinkle with sesame seeds and garnish with chopped green onions before serving.

Notes

  • For a spicier version, add a teaspoon of gochujang (Korean chili paste) while stir-frying.
  • You can also incorporate protein by adding cooked chicken, beef, or tofu to the dish.
