Description

Fluffy Japanese Soufflé Pancakes that are light and airy, perfect for a delightful breakfast or dessert.

Ingredients

Scale
  • 2 large eggs, separated
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for dusting)
  • Butter or oil (for cooking)
  • Maple syrup and fresh fruit (for serving)

Instructions

  1. Whisk the egg yolks in a bowl along with the milk and vanilla extract until smooth and creamy.
  2. In a separate bowl, combine the flour, baking powder, and salt, then sift them together.
  3. Gradually incorporate the dry ingredients into the egg yolk mixture, stirring gently until fully blended.
  4. In a clean bowl, beat the egg whites using an electric mixer until soft peaks form.
  5. Slowly add the granulated sugar, continuing to beat until stiff peaks are reached.
  6. Carefully fold the whipped egg whites into the batter in three parts, maintaining the airy texture.
  7. Heat a non-stick skillet over low heat and lightly coat it with butter or oil.
  8. Pour 1/4 cup of batter onto the skillet for each pancake, leaving space between them.
  9. Cover the skillet with a lid and cook for about 4-5 minutes until the bottoms are golden brown.
  10. Gently flip the pancakes, cover again, and cook for an additional 4-5 minutes until fully puffed and cooked through.
  11. Transfer the pancakes to a plate, dust with powdered sugar, and serve warm with maple syrup and fresh fruit.

Notes

  • Ensure to beat the egg whites until stiff peaks for the best fluffiness.
  • Cook on low heat to prevent burning while allowing the pancakes to puff up.
  • Experiment with different toppings like whipped cream or berries.
