- 2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1 cup water (adjust as needed)
- 1 tablespoon yogurt
- 1/2 teaspoon saffron strands (optional)
- 1 cup sugar
- 1/2 cup water (for syrup)
- 1/2 teaspoon cardamom powder
- Oil for frying
Instructions
- In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, turmeric powder, and salt. Mix well.
- Gradually add 1 cup of water and yogurt to the dry ingredients, stirring until you achieve a smooth, thick batter. If using saffron, add it to the batter. Let the batter rest for 30 minutes.
- In a saucepan, combine 1 cup of sugar and 1/2 cup of water. Heat over medium heat until the sugar dissolves. Add cardamom powder and simmer for 5 minutes. Remove from heat and set aside.
- Heat oil in a deep frying pan over medium heat.
- Pour the batter into a piping bag or squeeze bottle. Once the oil is hot, carefully squeeze the batter into the oil in circular shapes, forming spirals. Fry until golden brown on both sides, about 2-3 minutes.
- Remove the fried jalebi and immediately dip them into the warm sugar syrup for about 10-15 seconds.
- Place the jalebi on a plate lined with paper towels to drain excess syrup. Serve warm.
Notes
- For a crunchier texture, allow the jalebi to cool slightly before dipping in syrup.
- You can also add a few drops of rose water to the syrup for an aromatic twist.
- For a healthier version, try baking the jalebi in a preheated oven at 375°F for about 15 minutes instead of frying.
