Description

Crispy Sweet Jalebi


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1 cup plain yogurt
  • 1/2 cup water (adjust as needed)
  • 1 cup sugar
  • 1/2 cup water (for syrup)
  • 1/4 teaspoon cardamom powder
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, turmeric powder, and salt. Mix well.
  2. Add the yogurt and gradually mix in water until you achieve a smooth, thick batter. The consistency should be similar to pancake batter. Cover and let it rest for about 30 minutes.
  3. While the batter is resting, prepare the sugar syrup. In a saucepan, combine 1 cup of sugar and 1/2 cup of water. Bring to a boil and then simmer for about 5 minutes until slightly thickened. Stir in the cardamom powder and set aside.
  4. Heat oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
  5. Pour the batter into a squeeze bottle or piping bag fitted with a small round tip. Carefully squeeze the batter into the hot oil in spiral shapes, starting from the center and working outward. Fry until golden brown, about 2-3 minutes on each side.
  6. Remove the jalebi from the oil and immediately dip it into the warm sugar syrup for about 10 seconds, then place on a wire rack to drain excess syrup.
  7. Repeat the process with the remaining batter. Serve warm or at room temperature.

Notes

  • For a twist, add a few drops of orange or rose water to the sugar syrup for extra flavor.
  • If you prefer a less sweet version, reduce the sugar in the syrup by half and serve the jalebi with a side of yogurt for a balanced taste.
