A delicious and easy recipe for Iskender Kebab, featuring tender meat served over toasted pita with a warm tomato sauce and yogurt.

- 1 pound lamb or beef, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 tablespoon butter
- 4 pita breads, cut into triangles
- 1 cup plain yogurt
- 1/4 cup tomato sauce
- 1/4 cup water
- 1 tablespoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, combine the sliced meat with olive oil, salt, black pepper, paprika, and ground cumin. Mix well and let marinate for at least 30 minutes.
- Heat a large skillet over medium-high heat. Add the marinated meat and cook for about 5-7 minutes, or until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, melt the butter. Add the pita bread triangles and toast them lightly until golden brown, about 2-3 minutes. Remove from the skillet and arrange on a serving platter.
- In a small saucepan, combine the tomato sauce and water. Heat over low heat until warmed through. If desired, stir in red pepper flakes for extra heat.
- To serve, layer the toasted pita bread on a plate, top with the cooked meat, and drizzle with the warm tomato sauce. Serve with a dollop of plain yogurt on the side and garnish with chopped parsley.
Notes
- For a spicier version, add diced jalapeños or a dash of hot sauce to the yogurt.
- Substitute the meat with grilled chicken or a plant-based protein for a different flavor profile.
