Description

A delicious and easy recipe for Iskender Kebab, featuring tender meat served over toasted pita with a warm tomato sauce and yogurt.


Ingredients

  • 1 pound lamb or beef, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon butter
  • 4 pita breads, cut into triangles
  • 1 cup plain yogurt
  • 1/4 cup tomato sauce
  • 1/4 cup water
  • 1 tablespoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the sliced meat with olive oil, salt, black pepper, paprika, and ground cumin. Mix well and let marinate for at least 30 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated meat and cook for about 5-7 minutes, or until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt the butter. Add the pita bread triangles and toast them lightly until golden brown, about 2-3 minutes. Remove from the skillet and arrange on a serving platter.
  4. In a small saucepan, combine the tomato sauce and water. Heat over low heat until warmed through. If desired, stir in red pepper flakes for extra heat.
  5. To serve, layer the toasted pita bread on a plate, top with the cooked meat, and drizzle with the warm tomato sauce. Serve with a dollop of plain yogurt on the side and garnish with chopped parsley.

  • For a spicier version, add diced jalapeños or a dash of hot sauce to the yogurt.
