- 2 packages of instant ramen noodles
- 4 cups water
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 cup fresh spinach
- 1 cup sliced mushrooms
- 2 green onions, chopped
- 2 large eggs
- 1 teaspoon chili paste (optional)
- Salt and pepper to taste
Instructions
- In a medium pot, bring 4 cups of water to a boil.
- Add the instant ramen noodles and cook according to package instructions, usually about 3 minutes.
- While the noodles are cooking, heat a skillet over medium heat and add the sesame oil.
- Add the sliced mushrooms and sauté for about 3-4 minutes until they are tender.
- Stir in the fresh spinach and cook until wilted, about 1-2 minutes. Season with salt and pepper to taste.
- In a separate small pot, bring water to a gentle simmer. Carefully crack the eggs into the simmering water and poach for about 3 minutes, or until the whites are set but the yolks are still runny.
- Once the noodles are cooked, drain them and return them to the pot. Stir in the soy sauce and chili paste (if using).
- Divide the noodles into bowls, top with the sautéed mushrooms and spinach, and place a poached egg on top of each bowl.
- Garnish with chopped green onions and serve immediately.
Notes
- For added protein, consider adding cooked chicken, shrimp, or tofu to the bowl.
