Idli with Sambar: Enjoy Fluffy Idlies and Spicy Sambar!

Description

Fluffy Idli served with spicy Sambar, a traditional South Indian dish.


Ingredients

Scale
  • 2 cups idli rice
  • 1 cup split urad dal (black gram)
  • 1 teaspoon fenugreek seeds
  • Salt to taste
  • Water as needed
  • For Sambar:
  • 1 cup toor dal (pigeon peas)
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • 1 carrot, diced
  • 1 potato, diced
  • 1 tablespoon sambar powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 2 tablespoons tamarind paste
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Water as needed

Instructions

  1. Soak the idli rice, urad dal, and fenugreek seeds in separate bowls for at least 6 hours or overnight.
  2. Drain and blend the rice and dal mixture with a little water until smooth and thick.
  3. Pour into a large bowl, cover, and let it ferment in a warm place for 8-12 hours or until doubled in size.
  4. For the sambar, rinse the toor dal and cook it in a pressure cooker with 3 cups of water for about 3-4 whistles or until soft.
  5. Mash the dal and set aside.
  6. In a pot, heat oil over medium heat, add mustard seeds, and let them splutter.
  7. Add chopped onions and sauté until translucent.
  8. Add tomatoes, carrots, potatoes, turmeric powder, sambar powder, and salt. Stir for a few minutes.
  9. Add the mashed dal and tamarind paste. Adjust the consistency with water and simmer for 10-15 minutes.
  10. Garnish with fresh coriander leaves.
  11. Prepare the idli steamer by greasing the idli molds.
  12. Pour the fermented batter into the molds and steam for about 10-12 minutes or until a toothpick comes out clean.
  13. Serve the fluffy idlis hot with sambar on the side.

Notes

  • For a spicier sambar, add green chilies or red chili powder to taste.
  • You can also serve idlis with coconut chutney for a delicious combination.
