Icelandic Plokkfiskur is a traditional dish made with flaked white fish and potatoes in a creamy sauce, perfect for a comforting meal.

- 2 cups cooked white fish (such as cod or haddock), flaked
- 1 cup potatoes, peeled and diced
- 1 cup milk
- 1 medium onion, finely chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- 1/4 cup grated cheese (optional, for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium pot, boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Stir in the flour and cook for 1-2 minutes, stirring constantly to form a roux.
- Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5 minutes.
- Add the flaked fish, cooked potatoes, salt, black pepper, paprika, and thyme to the skillet. Stir gently to combine, being careful not to break up the fish too much.
- Cook for an additional 5 minutes until heated through. If desired, sprinkle grated cheese on top and place under the broiler for 2-3 minutes until melted and bubbly.
- Serve hot, garnished with fresh parsley.

- For a creamier texture, substitute half of the milk with heavy cream.
