Ingredients

  • 2 live blue crabs (about 1.5 pounds each)
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1/2 cup vegetable oil
  • 6 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup scallions, chopped
  • 1/4 cup cilantro, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice wine (or dry sherry)
  • 1 teaspoon sugar

Instructions

  1. Begin by cleaning the crabs. Place them in the freezer for about 15 minutes to numb them. Once ready, rinse them under cold water, then remove the top shell and gills. Cut the crabs into quarters and set aside.
  2. In a large bowl, combine the flour, salt, black pepper, and cayenne pepper. Dredge each crab piece in the flour mixture, ensuring they are well coated.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, carefully add the crab pieces in batches, frying until golden brown and crispy, about 5-7 minutes per side. Remove the crabs and drain on paper towels.
  4. In the same skillet, remove excess oil, leaving about 2 tablespoons. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  5. Add the fried crab pieces back into the skillet. Pour in the soy sauce, oyster sauce, rice wine, and sugar. Toss everything together to coat the crab evenly in the sauce and cook for an additional 2-3 minutes.
  6. Remove from heat and stir in the chopped scallions and cilantro. Serve immediately.

  • For a spicier kick, add sliced fresh chili peppers or a dash of chili oil when sautéing the garlic and ginger.
  • Substitute blue crabs with Dungeness crabs or king crabs for a different flavor profile and texture.
