- 1/2 cup heavy cream
- 1/2 cup chopped pecans
- 1/4 cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon almond extract (optional)
- 1/4 cup powdered erythritol (for dusting)
Instructions
- In a microwave-safe bowl, melt the sugar-free white chocolate chips in 30-second intervals, stirring in between, until smooth.
- In a separate saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and stir in the melted white chocolate until fully combined.
- Add the chopped pecans, shredded coconut, vanilla extract, salt, and almond extract (if using) to the chocolate mixture. Stir until evenly mixed.
- Line a muffin tin with cupcake liners. Pour the mixture evenly into the liners, filling each about three-quarters full.
- Refrigerate for at least 2 hours or until set.
- Once set, remove the cups from the muffin tin and dust the tops with powdered erythritol for a snowy effect.
