- 2 cups water
- 2 tablespoons dried hibiscus flowers
- 1/4 cup erythritol (or preferred keto sweetener)
- 1 tablespoon gelatin powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup cold water
Instructions
- In a medium saucepan, bring 2 cups of water to a boil. Once boiling, remove from heat and add the dried hibiscus flowers. Let steep for about 10-15 minutes, then strain the liquid into a bowl, discarding the flowers. You should have about 1 1/2 cups of hibiscus tea.
- In a separate small bowl, combine the gelatin powder with 1/2 cup of cold water. Let it sit for about 5 minutes to bloom.
- In the saucepan with the hibiscus tea, add the erythritol, vanilla extract, and salt. Stir well until the sweetener is fully dissolved.
- Return the saucepan to low heat and add the bloomed gelatin mixture, stirring continuously until completely dissolved. Do not let it boil.
- Remove from heat and pour the mixture into silicone heart-shaped molds or any desired mold.
- Place the molds in the refrigerator and let them chill for at least 2-3 hours, or until fully set.
- Once set, gently remove the jelly hearts from the molds and serve.
Notes
- For a fruity twist, add a few drops of food-safe flavoring like raspberry or lemon to the mixture before pouring into molds.
- If you prefer a firmer jelly, increase the gelatin to 1 1/2 tablespoons.
