Ingredients

  • 1 cup unsweetened shredded coconut
  • 1 cup erythritol or preferred keto sweetener
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/2 cup crushed pistachios
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a large mixing bowl, combine almond flour, shredded coconut, erythritol, baking powder, baking soda, and salt. Mix well.
  4. In another bowl, cream the softened butter until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract and almond milk.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Gently fold in the crushed pistachios and fresh raspberries.
