Ingredients

- 1 cup almond flour
- 1/2 cup rolled oats
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup natural peanut butter
- 1/4 cup dark chocolate chips
- 1 tablespoon coconut milk
Instructions
- Preheat the oven to 350°F.
- Line a muffin tin with paper liners or grease it lightly.
- In a mixing bowl, combine almond flour, rolled oats, melted coconut oil, maple syrup, vanilla extract, and salt. Stir until a dough forms.
- Press about 1 tablespoon of the dough into the bottom of each muffin cup to form a crust.
- Bake for 10-12 minutes or until lightly golden.
- Remove from the oven and let cool for about 5 minutes.
- Once cooled, make a small indentation in the center of each cookie cup using the back of a teaspoon.
- In a separate bowl, mix peanut butter, dark chocolate chips, and coconut milk until smooth.
- Spoon this mixture into the center of each cookie cup.
- Return the cookie cups to the oven and bake for an additional 5 minutes.
- Remove and let cool completely before serving.
Notes
- These cookie cups can be stored in an airtight container in the refrigerator for up to a week.
- For added crunch, sprinkle some crushed nuts on top before baking.
- You can substitute almond flour with whole wheat flour for a different flavor profile.
- For a vegan option, replace honey with agave syrup.
