Harira Soup will warm your soul and delight your palate!


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 celery stalks, diced
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 6 cups vegetable broth
  • 1/2 cup lentils (green or brown)
  • 1/2 cup uncooked rice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • Salt to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, celery, and carrots, and sauté for about 5 minutes until softened.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the cumin, coriander, cinnamon, turmeric, and black pepper to the pot. Cook for another minute until the spices are fragrant.
  5. Stir in the chickpeas, diced tomatoes, vegetable broth, lentils, and rice.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the lentils and rice are tender.
  7. Add the chopped parsley, cilantro, lemon juice, and salt to taste. Stir well and let the soup simmer for an additional 5 minutes.
  8. Serve hot, garnished with extra herbs if desired.

Notes

  • For a heartier soup, add diced potatoes or zucchini during the cooking process.
  • To make it spicier, include a pinch of cayenne pepper or a diced jalapeño.
