Ingredients

- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 celery stalks, diced
- 2 medium carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon turmeric
- 1/2 teaspoon black pepper
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 can (15 ounces) diced tomatoes
- 6 cups vegetable broth
- 1/2 cup lentils (green or brown)
- 1/2 cup uncooked rice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lemon
- Salt to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, celery, and carrots, and sauté for about 5 minutes until softened.
- Stir in the garlic and cook for an additional minute.
- Add the cumin, coriander, cinnamon, turmeric, and black pepper to the pot. Cook for another minute until the spices are fragrant.
- Stir in the chickpeas, diced tomatoes, vegetable broth, lentils, and rice.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the lentils and rice are tender.
- Add the chopped parsley, cilantro, lemon juice, and salt to taste. Stir well and let the soup simmer for an additional 5 minutes.
- Serve hot, garnished with extra herbs if desired.
Notes
- For a heartier soup, add diced potatoes or zucchini during the cooking process.
- To make it spicier, include a pinch of cayenne pepper or a diced jalapeño.
